Given
the limited number of guests on our Alaskan Fly fishing holidays and adventures,
we take great pride in insuring a world class culinary experience and will make
you feel as though you have your own personal chef. Like everything else you
will experience while at the Lodge, our food and beverage offerings will delight
your senses and enrich the enjoyment of your Alaskan experience. In addition we
offer friendly service and equally eager to please and aspire guests' needs
before they are expressed. The lodge draws from a number of culinary styles and
methods to create a wide range of delicious and
attractive signature offerings that make use of local ingredients in season and
elegantly reflect the rugged and
aesthetic beauty of Alaska.
Breakfast
Hearty and delicious breakfast selections are the key to a great start in the
Alaskan wilderness. Enjoy pancakes, cereals, and fresh breads and muffins –
often prepared fresh-picked wild berries. High protein selections include
omelets, eggs cooked to order, and a selection of breakfast meats and fresh made
sausages.
Lunch
Movable feast for guests who are out on boats or sitting on the bank of a river?
This is the question that we are continuously working to answer. We have
developed daily lunch options, most days a field your guide will prepare a hot
shore lunch. A selection will be available of homemade soup and sandwiches and
other tasty treats. Or your freshly caught Salmon could be sautéed or grilled
for you stream side.
Hors d'oeuvres Reception
The Hors d'oeuvres Reception is from 6:00 - 7:00 p.m. To prepare for this event,
all of our boats and guides return to the lodge with their guests around 5 p.m.
At that time, guests have a chance to freshen up from a long day of fishing or
sightseeing while their guides prepare fish for freezing, the only bad news is
our guests are forced to make a choice between filling up on the delicious
appetizers or saving room for dinner. This often hard choice is all yours.
Dinner This is where the Alaskan Lodge really shines. Your Alaskan dining
experience is a culinary adventure in it self. The staff at the Lodge create the
evening's menu each morning. This allows for guest preferences, seasonally
available ingredients and the fresh catch of the day to be utilized in creating
a menu to fit the ever changing moods of Alaska. Often times, changes are made
at the last minute to take advantage of these gifts from nature.
Mixed fresh
green garden salad Locally grown
assorted lettuces and vegetables. Choice of homemade dressing consisting of
creamy herb vinaigrette, or balsamic vinaigrette, blue cheese, or ranch
dressing. Classic Caesar dressing topped with croutons, fresh Italian Parmesan
cheese, and anchovies. Also specialty salads that are ever changing.
Soup of the
Day All our soups are
home made from scratch by us. Tomato basil, clam chowder, onion & cheese,
beef barley, chicken noodle, vegetable, or seafood chowder and so many more.
Main Courses Grilled Halibut with
spring vegetables served with fresh herbed tomato lime broth. Beer battered
halibut fish and chips served with your choice of sauce and malt vinegar.
Crusted halibut served with hoisin dipping sauce and ginger cabbage. Pinor-planked
salmon served with baby red potatoes, and grilled corn on the cob. Grilled pork
loin chop with a Jack Daniels sauce and garlic mashed potatoes. Herb crusted
rack of lamb served with a wine, roasted garlic glaze and potato. Grilled fillet
served to order with baked potato and fresh vegetable. Hardwood flavored roasted
prime rib of beef. Slow roasted with a hint of garlic flavoring and served with
béarnaise and roasted potatoes. Pan roasted pork Tenderloin . Freshly grilled
salmon served with rice and broccoli. And so much more but we had to end
somewhere!!!!! We are also
happy to accommodate special dietary needs with advance notice.
Beverage
Service During the day, boat
coolers are stocked with your choice of soft drinks, bottled water, Gourmet
Coffee and teas, Guests may bring their own spirits to the lodge if they prefer.
